The Best Lasagna

Quick and easy to make! Great to meal prep for the week!

Ingredients: 

  • Cooking spray 
  • 1 box of Oven ready lasagna noodles (or regular) 
  • 1-2 25oz Cans of sauce (depends on how saucy you like it.)
  • 1 1lb of meat (if you choose to use meat)
  • 2 15oz Ricotta Cheese containers 
  • 2 eggs
  • 1 6oz of Parmesan cheese
  • 1 6oz package of mozzarella cheese
  • Italian Seasoning 

Directions:

  1. If you're baking immediately pre-heat the oven to 375.  
  2. I like using aluminum foil pans for an easy clean up but spray the bottom of whatever your cooking it in with your choice of cooking spray! 
  3. Cover bottom with sauce (not too much.)
  4. If you're using meat, cook your preferred meat until done. 
  5. In a large bowl whisk the ricotta cheese, eggs, and a generous portion of Italian seasoning together. 
  6. Line your pan with the noodles. 
  7. Cover lightly with cheese mixture. 
  8. Cover lightly with some meat (not all.) 
  9. Cover lightly with sauce.
  10. Sprinkle the Parmesan & mozzarella on top 
  11. repeat steps 6-10 until you're out of food. This should be enough for 3-4 layers. 
  12. When you're at your last layer cover with sauce and the Parmesan & mozzarella cheese then sprinkle the Italian seasoning on top. 
  13. Bake for 25 minutes with foil lid on. Take foil off and bake for 5 minutes. Let sit for 15 minutes. 
  14. Enjoy! 

Extras

If I'm making a meatless lasagna I'll add 2-3 cups of chopped spinach to the ricotta mixture in the beginning. This was a big hit for my kids!
