Ingredients:
- Cooking spray
- 1 box of Oven ready lasagna noodles (or regular)
- 1-2 25oz Cans of sauce (depends on how saucy you like it.)
- 1 1lb of meat (if you choose to use meat)
- 2 15oz Ricotta Cheese containers
- 2 eggs
- 1 6oz of Parmesan cheese
- 1 6oz package of mozzarella cheese
- Italian Seasoning
Directions:
- If you're baking immediately pre-heat the oven to 375.
- I like using aluminum foil pans for an easy clean up but spray the bottom of whatever your cooking it in with your choice of cooking spray!
- Cover bottom with sauce (not too much.)
- If you're using meat, cook your preferred meat until done.
- In a large bowl whisk the ricotta cheese, eggs, and a generous portion of Italian seasoning together.
- Line your pan with the noodles.
- Cover lightly with cheese mixture.
- Cover lightly with some meat (not all.)
- Cover lightly with sauce.
- Sprinkle the Parmesan & mozzarella on top
- repeat steps 6-10 until you're out of food. This should be enough for 3-4 layers.
- When you're at your last layer cover with sauce and the Parmesan & mozzarella cheese then sprinkle the Italian seasoning on top.
- Bake for 25 minutes with foil lid on. Take foil off and bake for 5 minutes. Let sit for 15 minutes.

Extras:
If I'm making a meatless lasagna I'll add 2-3 cups of chopped spinach to the ricotta mixture in the beginning. This was a big hit for my kids!
